Some people do choose to give the mothers a day or so to get settled in with the babies, but just as many (including myself) handle them within a few hours. I usually just sex them all on the first day, and start socializing them on the second. Everyone sort of has their own way of doing things, and it really just has to be a judgement call- it's best to observe the mother and see how she feels about things, and if you handling the babies so soon really seems to freak her out, it's okay to give her some time- but most (well socialized) mothers are fine with it from day one.
I'd like to emphasize what Serendipity said though, that mice are very skittish by nature and they really need human contact as early as possible for them to ever be well socialized. Waiting a week or so with mice pretty much ensures that the babies will not be as friendly and calm about being handled as they could be.

Your mice are probably very tame already. I am guessing the advice I always hear and is because the mother is skittish. I do however, always read that even though you shouldnt touch them the first day, they need to be handled by day 3 at the latest.
